Every Christmas Eve we have a buffet dinner at my Virginia parents' home,
and every year we have the same basic main menu...
Baked Ham, Cheesy Potato Casserole, and Calico Beans...a favorite of mine.
There are many different recipes for Calico Beans, but I love my Virginia mom's recipe!
Here it is...
Calico Beans
1/2 lb. Bacon
1 Medium Onion, chopped
1/2 lb. Ground Beef
1/2 Cup Catsup
1 tsp Salt
3/4 Cup Brown Sugar
1 tsp Dry Mustard
2 tsp vinegar
1/2 Cup White Sugar
1 Can Butter Beans
1 Can Kidney Beans
1 Can Pork & Beans
1 Can Lima Beans
Cut Bacon into small pieces and brown in skillet until crisp.
Move Bacon to side of skillet and add chopped onion and saute until soft.
Move onions to side of skillet and brown ground beef.
Drain remaining fat after ground beef is browned and add to skillet:
catsup, salt, brown sugar, dry mustard, vinegar, and white sugar.
Heat until warm and place in large casserole.
Add all of the cans of beans into casserole and mix.
Bake at 350 degrees for about an hour.
Can be kept warm in a crock pot after cooking.

yummo recipe! my favorite thing would have to be pecan pie...a must have for this southern girl :) BTW I saw Williams Sonoma is having a "buy more, save more" promo through today so maybe something else can get crossed off your wish list. just saying :) hope you're doing well. :)
Ixnay to the heated blanket... your loving husband.
I've never heard of Calico Beans, these sound so yummy! I'm definitely going to give them a try, thank you for the recipe. My favorite holiday recipe is mashed sweet potatoes with rum and a pecan streusel topping. They taste like desert!
XOXO,
The Glam Pad
that sounds like an AMAZING holiday dinner
This sounds delicious and would have been so tasty on this freezing NC evening. Can't wait to try!!
