What's for dinner?

In this day and age, many families no longer sit down to eat dinner together. In our family, we try to sit down for dinner together every night, although that can be a serious challenge during baseball and cheering season when we have about a five minute window to eat dinner.

Dinnertime is when we all connect and talk about our day...our dinner conversation is full of laughter and there have been nights where we talk about serious things such as what is going on in our world, or silly things like the time the twins put a rubber alligator in my shower (was not funny at the time for me LOL). There are no phones allowed at the table (or any electronics) and I am often referred to as the "manners police" as I am always reminding someone if they are not using their manners.

In an attempt to be organized (and to minimize the number of trips to WalMart) I try to plan my menu out for the week. Dinner is always a challenge during the week because I never know for sure how many kids will be home for dinner. I make a lot of casseroles during the week and when it's warm outside, we have salads for dinner. Here are some of the things on my menu this week:

This is one of my favorites! Here is the recipe...
 
 
Enchilada Casserole
 
 
 
This is a fast and easy recipe...I use taco seasoning when browning the ground beef and serve with sour cream.
 
 
We have baseball tonight so it will be a grilled cheese and tomato soup kind of eat and run dinner at 5:00 and then the boys will want to eat dinner again when they get home...thank goodness for Costco and their endless selection of frozen pizzas and popcorn chicken! Not the most nutritious of meals but seriously who feels like making dinner again at 9:00pm when you have two starving tween boys who desperately need showers and to finish homework?
